A well balanced breakfast – The way it should be
I love nothing more than waking up to the sound of birds chirping away in the background, the glow above the curtains where the sun has tried to enter fill the room and the aroma of freshly ground coffee beans filling the air. Sadly this is not usually how I wake up… it’s usually cold, dark and I’ve been woken by the obnoxious sounds of my alarm telling me its time to get ready for work. Know the feeling? Well I have a solution’s for you, it’s all about balance. You need to have good with the bad, and since we’ve already got the bad figured out we need some good. Coffee certainly counts as a good, but is the coffee enough to provide the balance you need? (No is the correct answer) Below you will find my recipe for a quick, light delicious breakfast that will make the worst mornings seem like the day will be OK.
Avocado Chili Toast
What you’ll need:
1x sourdough vienna loaf
1x ripe avocado
1x small squeeze lime
1x red chili, finely diced
1x teaspoon butter
1x Egg (at room temp)
This all happens pretty quick however feel free to slow it down and do it one at a time… it is first thing in the morning after all!
Heat a frying pan over medium heat, slice the bread and get it in the toaster,
Add the butter and oil to the frying pan and crack in your egg and fry it for about 3-4 minutes so the whites are cooked but the yolk is still runny. (reduce the heat if the bottom is burning)
Remove the seed from the avocado, scoop flesh out into a bowl, add half the chili (or to taste) a squeeze of lime and a pinch of salt and pepper. Mix well.
Once the sourdough is toasted top with avocado paste and add the rest of the chili. Add the egg once cooked and there you have it a well-balanced breakfast that is sure to improve your day!
